For the Base

  • 2 cups basmati rice
  • 500g chicken or mixed vegetables
  • 1 large onion, sliced
  • 1 tbsp ginger-garlic paste
  • 2 tbsp yogurt

For Spice Layer

  • 1 tbsp Bisi Bele Bath blend
  • 1 tsp Melkote Puliygre
  • Mint and coriander leaves
  • Salt to taste
  • 2 tbsp ghee

How it comes together

  1. Parboil basmati rice and set aside.
  2. Cook onions, protein/veg, and aromatics until partly done.
  3. Add spice blends and yogurt; cook until fragrant.
  4. Layer rice and curry mix, drizzle ghee, and steam on low heat.
  5. Rest for 10 minutes before serving.
